RECIPES:
MEDITERRANEAN EGGPLANT ON A STICK:
- 1 pound ground meat.
- 8 medium size italian eggplants.
- salt and pepper.
- 1/2 teaspoon of all spice.
Add salt and pepper and all spice to the meat. Mix well. Wash and cut the eggplants in wedges. On a bamboo skewer alternate an eggplant piece with a small scoop of the meat.
Broil or barbeque the skewers making sure all sides are well cooked. Serve with a tomato and cucumber salad.
TOMATO AND CUCUMBER SALAD:
- 2 cups fresh diced tomatoes.
- 1 cup fresh diced cucumber.
-1/2 cup diced scallions.
Dressing: – 2 tablespoons freshly squeezed lemon juice.
- 2 tablespoons virgin olive oil.
- salt and pepper.
Mix and add to the salad and give it a quick toss.
Now that looks very good to eat!
