- 2 large brown eggs.
- 1 tablespoon freshly minced parsley.
- 2 tablespoons plain creamy yogurt.
- 2 small garlic cloves (optional).
- 1 teaspoon olive oil.
- salt and pepper.
In a bowl, beat the eggs. Add parsley, salt and pepper. Mix well.
In a pan, heat the olive oil. Add the egg mixture. Let cook.
In a small bowl, mix yogurt and crushed garlic (adding garlic is optional) then spread the yogurt on the plate.
Fold the cooked omelette and slide it on the plate.
Garnish with fresh parsley.
